Today, I thought that I would share a fairly easy recipe with you, but it is one of my all-time favorites! Going to college in Kentucky, I became accustomed to having beer cheese available in every grocery store and liquor store, but that isn’t the case here in California. I honestly hadn’t even though to look for it in California until I was on my way to a party one night with friends and needed to bring a dish and I was aghast at the fact I couldn’t find it. That was how the idea for finding my own recipe was born.
Admittedly, I don’t drink beer so this recipe always falls on me begging someone else to choose a beer that they’ll finish when I’m done making the cheese dip concoction. Today, it was Guinness even though that’s an Arrogant Bastard Ale glass. Love enjoys both of them, but we honestly had extra Guinness laying around so Guinness it was this time. The truth is that I haven’t made it with the same beer twice, but I do know that the beer you use plays an important role in the flavor. The best batch I ever made happened over Christmas when I was in Tennessee to spend time with my family. That time we used Highland Brewing Company’s Black Mocha Stout. None of the beers are paying me to say nice things about them. Actually no one is paying me to say anything on this blog.
The nicest thing about beer cheese to be honest is that you can throw it together pretty quickly for a party dip or item to take to a pot luck. It’s a dip that gets eaten quickly with any type of crackers or even sometimes on fruits or vegetables. I think it’s pretty great on a nice tart apple.
- 1 8oz package cream cheese
- 2 5oz packages sharp cheddar cheese spread, I used Kakuna
- 1/4 c beer, any beer you choose
- 1. Place cream cheese and sharp cheddar spread in a microwave safe bowl and put it in the microwave for 2 minutes. You’ll want to check in on it and stir every 30 seconds.
- 2. Pour beer in and stir.
- 3. Place in the fridge for about 2 hours to chill.
