Cross Country Road Trip Pt 11: Springfield, MO and Albuquerque, NM

I was a bad blogger who didn’t take a lot of photos for this portion of the trip. We were traveling pretty quickly to get home so there weren’t a lot of stops. The hubs needed to get work done when he could, and we were honestly just ready to be back at our own house. I thought that would make today the best day to really just include two places.

Springfield was the quickest stop of the trip. We have a friend who is from there, but he lives here. Anyway, we thought it would be great to stop at one of his haunts for a quick pitstop. The hubs had a wonderful coffee, and I had my cheat Coke of the day. Shhh don’t tell on me. Seriously though, I needed rid of the killer headache I was experiencing. This photo was taken from Mudhouse Coffee. It was a music venue across the street. I just liked the way it looked.

In Albuquerque, we decided to really treat ourselves to dinner. The Standard Diner was on Food Network’s Triple D, and we just knew we were going to love it. Honestly, I’d give it mixed reviews. I’m not saying that it was all bad, because I could have made an entire meal on those chili cheese fries and then some. I will be figuring out a way to make these at home. It was a white cheese sauce over crisp french fries with green chiles on the top. It was just spicy enough but not so bad I had heartburn for days. You ladies remember days when there weren’t enough Tums in the world, right?

The part of dinner that let me down a little bit though were these chicken enchiladas. They were fine, but they just weren’t special. I think I could’ve gotten these at any restaurant in the town. I’ll admit though that the hash browns were great with what little sauce was leftover from the fries. I mean who doesn’t love potatoes and cheese?

    Those fries! They make my mouth water just by looking at them. If you figure out how to make them at home, you’ll definitely have to have a recipe post on your blog. It is a life necessity. ;)

    Cheese and potatoes is never wrong! I will grill potato rounds in a pan on my stove in the morning and then sprinkle on a little Parmesan cheese, for pizzazz. But cheese sauce over hash browns? Sounds aaammmaazzinnnggg.

      Seriously. I have to figure it out or at least something slightly comparable. It’s a MUST. I promise to share the goodness when I do.

      Cheese and potatoes are some of my favorite things in life. Of course I could also eat potatoes for every single meal ever. Yep, I’m a Girl Who Grew Up In The South. haha.

    I just love diners. Maybe it’s because they remind me of my grandparents since they have a favorite diner that they always take me to in Pennsylvania. Too bad the enchiladas weren’t too special–at least you enjoyed the rest of your meal. :)

      Diners are fabulous and they often have some of the best food in an area or region. They’re just very homegrown. Sometimes you win a really great meal and sometimes you just win a really great part of a meal. It’s all about being adventurous though.
