It’s the unofficial start of summer! This means it’s also time for this summer’s big hit, POPSICLES! I know that I enjoy them most on a hot summer day. I remember being a small child and walking up to my mom sticking an Otter Pop in her face begging her to open it. I was picky about flavors though. I wanted the grape, cherry, or orange ones. You couldn’t have paid me to eat the green. It was icky. Does anyone really like the lime flavor?
Mostly today it’s important to remember why we’re celebrating. It’s a holiday that was always important in my family. My papaw and great uncle were in WWII. My mom and uncle were in the military during Vietnam. My uncle over there fighting and my mom here being a nurse. Today was always the day we went to celebrate our veterans with not only parades but visiting the gravesites and putting flags down in the ground. This was a tradition carried on this year by my nephews, and they looked absolutely adorable doing it.
I was sad to be unable to celebrate that way myself this year, but I will be forever honoring the great veterans of this country especially those who lost their lives fighting for the freedom we enjoy. As a kid, I would walk through airports saluting everyone in a military uniform. They all thought it was adorable of course. They’d salute back and smile. My day was made. So today while you enjoy these delicious popsicles just remember to take a moment to thank those who have helped give us the ability to freely BBQ with our best friends by the pool.
Watermelon Basil Pops
- 1 c watermelon puree
- 1 tbsp basil
- 1. Blend watermelon in a blender.
- 2. Dice basil.
- 3. Once the watermelon is pured add in basil and pulse a couple of times to incorporate.
- 4. Pour into paper cups.
- 5. Stick popsicle stick in the middle and tape off so that it will stand straight.
- 6. Put in freezer until frozen. I did overnight.
