Forgive me for not posting yesterday. I was feeling a bit under the weather so I took a sick day from the blog. I’m still not feeling great, but I wanted to make up yesterday to you with this super awesome treat. Normally, I make these cookies as oatmeal orange cookies, but I think they might have been even better with lemon.

I was the kid that never wanted to make traditional cookies. I liked to experiment or at the very least I liked to find recipes for things that people weren’t normally cooking. That being said I had my old standbys like peanut butter cookies that I kept pretty classic, but I especially liked to kick it up a notch at Christmas time. Now I know we’re all gearing up for Spring here, which is why I wanted to introduce these citrus flavored cookies! There is nothing that lightens up the table like a bit of lemon!
I’ll be honest and tell you that these cookies are definitely something that will make the earth shaking every time you turn around totally not so bad. They taste delicious. They’re light. You could really sit in a corner eating the entire bag of them and not feel all that guilty. Hey, don’t judge me! At least they have oatmeal in them!
What doesn’t make a person feel more at home than cookies and milk? It’s like having your mom to watch over you when she’s not here except for the fact I had to make the cookies myself. One of these days I’ll have minions (or not)!

OATMEAL LEMON COOKIES
INGREDIENTS:
- 1 c. butter
- 2 c. sugar
- 2 eggs
- 1/2 tsp. nutmeg
- 4 tsp. baking powder
- 2 tbsp. lemon juice
- 2 c. unsifted flour
- 2 tbsp. grated lemon rind
- 2 c. quick cook oats
DIRECTIONS:
- 1. Preheat oven to 375 degrees.
- 2. In bowl cream butter.
- 3. Gradually beat in sugar until light and fluffy.
- 4. Beat eggs in one at a time.
- 5. Add salt, mace, baking powder, juice and flour.
- 6. Mix thoroughly.
- 7. Stir in grated lemon rind and oats.
- 8. Mix well.
- 9. Drop batter by small spoonful on greased sheets 2 inches apart.
- 10. Bake 10-12 mintues until lightly brown.
