Remember the other day when I showed you the above imaged and promised that I’d be back to show you more? Well today is your lucky day! We’re doing the black bean and corn casserole! As a girl growing up in the South, I grew up eating corn casserole for most holiday meals so I wanted to do a new take on it for y’all. This is also a super easy recipe to fix on a night when you need something filling, and it’s last minute. You’ll probably have most of the ingredients at the ready in your pantry or fridge.
All you’ll need is a box of Jiffy corn muffin mix, a can of creamed corn, a can of whole kernal corn, a can of black beans, a can of green chiles, and a cup of sour cream. I had to use two containers, because we were finishing off one. Basically this recipe is a throw everything in a bowl and mix variety. Nothing is easier for when you’ve gotta get all the kids off to soccer practice and ballet, but you don’t want them yelling that they’re hungry in 5 minutes.
As you can tell here, it doesn’t look super appetizing at first, but I promise that looks can be deceiving. I dumped everything in this large bowl and grabbed my favorite wooden spoon for mixing. I could already tell that this was going to be a great take on an old favorite. The only thing I might have changed if I did it over was adding a little bit of onion.
We put all the ingredients in a casserole dish and cooked in the oven at 350 degrees for 55minutes. The entire house began to smell enticing at this point. Of course you could also blame the turkey and sweet potato casserole. We cooked this on a day that could have been mistaken for Thanksgiving at my home back in Tennessee.
BLACK BEAN CORN CASSEROLE
- 1 can whole kernel corn, drained
- 1 can black beans, drained
- 1 can creamed corn
- 1 can diced green chiles
- 1 cup sour cream
- 1/2 stick butter, melted
- 1 box Jiffy corn muffin mix
- 1. Preheat oven to 350 degrees F.
- 2. Add corn, beans, creamed corn, chiles, sour cream, butter, and Jiffy corn muffin mix in a large bowl.
- 3. Pour mixture into greased 9 x 13 casserole dish. Bake for 55 minutes.
